True Laurel
The Verdict
"Cocktails built like wine pairings, around seasonal produce. James Beard semifinalist 2025. Sit at the bar and order what's on the seasonal menu."
What you need to know
True Laurel is the Mission cocktail bar from chef David Barzelay, the team behind Lazy Bear. The bar opened in 2017 next door and serves drinks designed to pair with food the way wine does. Bartender Nicolas Torres builds cocktails around obscure ingredients and seasonal produce. James Beard semifinalist for Outstanding Bar in 2025 and a regular on North America’s 50 Best Bars list.
The Drinks
The menu is structured by flavor profile rather than spirit. House-made tinctures, ferments, and clarified juices. The drinks are subtle and food-friendly rather than pushed. Won the Ketel One Sustainable Bar Award at North America’s 50 Best Bars 2024.
The Food
Bar food from the Lazy Bear team: snacks, sliders, fries with smoked aioli. Better than most bar food.
