Anthony Mangieri makes pizza his way: long-fermented sourdough, organic ingredients, and one type of dough cooked in a wood-fired oven. Una Pizza Napoletana opened on 11th Street in SoMa in 2018 after Mangieri spent a decade in New York. The room serves only pizzas, salad, and dessert. He works the oven himself most nights.

The Food

Five pizzas: Margherita, Marinara, Bianca, Filetti, and one rotating special. That is the menu. The dough is the work of decades. Each pizza takes 90 seconds in the oven and arrives with charred edges and a delicate, chewy interior.
