Bruma, a Fog-Themed Cocktail Lounge, Opens at the Ritz-Carlton October 12

The Ritz-Carlton, San Francisco is opening a cocktail lounge called Bruma on October 12, 2026, in the lobby of its 1909 building at 600 Stockton Street on Nob Hill. The name is the Spanish word for mist, and the hotel says the room is built around the city’s fog.

The Drinks

The cocktail list is organized into four sections the hotel calls passages: World’s Edge (citrus-forward), Open Water (Pacific-influenced), Golden City (built on California fruit and seasonality), and High Ground (martinis and stirred classics). Two service pieces are the house signatures: a Nob Hill Pisco Punch finished with pineapple brulee, and a tableside martini chilled with liquid nitrogen. Rare spirits, low-ABV drinks and spirit-free options are on the list as well.

The Pisco Punch reference is local. The drink was created in San Francisco in the late 19th century by bartender Duncan Nicol at the Bank Exchange Saloon in the Financial District, per KQED. The saloon closed in 1919 when Prohibition arrived.

The Food

The kitchen list announced so far is a Wagyu smash burger, a California poke bowl, a Dungeness crab roll, and Japanese milk bread served with cultured seaweed butter. The food and beverage program was developed with Lowder-Tascarella Hospitality, the consultancy run by Jeffrey Tascarella and Christopher Lowder.

The Space

Bruma seats 80, including seats at the bar. Interiors are by Fettle, the design firm founded by Tom Parker and Andy Goodwin with studios in Los Angeles and London. The room keeps the hotel’s original fireplace and adds a hand-etched eglomise back-bar mirror and a commissioned mural of the neighborhood, in a palette of aged brass, navy, espresso brown, blush and antique parchment.

The building itself opened in September 1909 as the Pacific Coast headquarters of the Metropolitan Life Insurance Company, designed in Neoclassical style by Napoleon LeBrun & Sons. It was designated San Francisco Landmark No. 167 in June 1984 and reopened as The Ritz-Carlton in April 1991 after a multi-year restoration. The pediment over the entrance carries a nine-figure terra cotta group made in 1920 by sculptor Haig Patigian.

Recurring programming: aperitivo hour Wednesdays and Thursdays from 4 to 6pm, live jazz Fridays from 7 to 10pm, and a Latin fusion band Saturdays from 7 to 10pm. The hotel has also said it plans an annual Dungeness crab celebration.

Hours and reservations: not yet published. The hotel says both will be announced closer to the opening. No pricing has been released.
