Marufuku Ramen
The Verdict
"Get the Hakata Tonkotsu DX. Go on a weekday before noon or after 2pm to skip the worst of the line. The broth is the real thing."
What you need to know
Marufuku opened in San Francisco’s Japantown in 2017. The kitchen centers on one thing: a Hakata-style tonkotsu broth made by boiling pork bones for over 20 hours until it turns milky white and rich with collagen.
The Food
Hakata Tonkotsu: The order. Thick, creamy broth, ultra-thin artisanal noodles, sliced pork belly cha-shu braised until it falls apart. The DX version adds a thick slab of braised pork belly, corn, and nori for a few dollars more.
Chicken Paitan: Same long-cook technique with chicken bones for a lighter but equally rich bowl.
Spicy Tan Tan Men: Chili-flavored ground chicken over the chicken broth.
Vegetable Ramen: Spinach noodles, no meat.
Solid karaage and gyoza on the apps side.
The Space
Inside the Japan Center mall on the second floor. Clean, modern, efficient. Counter seating and tables fill quickly during peak hours. Steam rising from the broth vats is part of the atmosphere.
