The Bar

Kevin Diedrich opened Pacific Cocktail Haven in 2016 and built it into one of the most-awarded bars in the country. P.C.H. won Best American Cocktail Bar at the Tales of the Cocktail awards. Diedrich won Best American Bartender in 2020 after four nominations. The World’s 50 Best Bars list has ranked P.C.H. in its North American top 30 multiple years running.

A fire destroyed the original location in 2021. Diedrich reopened a few steps away at 550 Sutter, in the building that originally housed the first Williams-Sonoma. The pineapple logo references that history and serves as the hospitality symbol the bar is built around.

The Drinks

Tropical-leaning cocktails built on Asian-Pacific ingredients. Tea, guava, calamansi, lychee, and pandan show up across the menu, mixed with a deep spirit selection. The list is organized by base spirit and runs across multiple pages. Bartenders will riff on your preferences if you don’t want to pick from the menu. Zero-proof options are well-built, not afterthoughts.

The Space

The new location is bigger than the original, with a new outdoor patio and more intimate seating areas. Still loud and busy on weekends. Walk-in only, which means lines at the door on Friday and Saturday nights after 8pm.
