What you need to know
The Food
Hakata Tonkotsu: The signature bowl. Thick, creamy broth, ultra-thin noodles, sliced pork belly cha-shu braised until tender. The DX version adds a thick slab of braised pork belly, corn, and nori for a few dollars more.
Chicken Paitan: Same long-cook technique with chicken bones for a lighter but still rich bowl.
Spicy Tan Tan Men: Chili-flavored ground chicken over the chicken broth.
Vegetable Ramen: Spinach noodles, no meat.
Karaage and gyoza on the appetizer side.
