What you need to know
Tony’s Pizza Napoletana is the North Beach flagship of Tony Gemignani, a 13-time World Pizza Champion. It sits on the corner of Stockton and Union Streets at Washington Square. In 2007 Gemignani became the first American to win the Pizza Napoletana category at the World Pizza Cup in Naples, and that winning Margherita is on the menu.
The Food
Seven ovens run at different temperatures so the kitchen can cook about a dozen regional styles. The one to know is the wood-fired Margherita: made by the traditional Neapolitan (STG) method, baked in a roughly 900-degree oven, and capped at 73 per day. They sell out, often early. The rest of the menu runs from New York and Detroit to Roman, New Haven, and Sicilian, plus pastas and a full bar.

Hours: Daily from noon; last seating 10pm Monday through Thursday, 11pm Friday through Sunday.
Getting there: The 8, 30, and 39 Muni lines stop within a block or two. Street parking around Washington Square is hard.
